Lavender Choc Pancake Puddings

These pancake puddings are so delicious straight from the oven with a drizzle of honey or maple syrup over the top. If you don't have lavender, they are a chocolatey delight with or without!

 

Ingredients

​

4 eggs

2 tbsp sugar

1 cup flour

1 cup milk

Butter (just a few tbsps)

Choc drops

1/2tsp lavender (optional)

Tools

​

measuring cups and spoons

mixing bowl

12 cup muffin tin

stirrer or fork

​

Method

​

Preheat oven to 180C/365F

Gather all of your ingredients

Tap your eggs gently on the counter and break into mixing bowl

Add sugar to the eggs and beat them together

Add in the flour and mix well

Slowly pour in the milk, mixing. It's okay if there are a few tiny lumps, it won't matter

Sprinkle lavender in

Add about 1/2tsp butter to each muffin cup

Heat in the oven for about a minute, until melted

Use a heatproof glove to remove hot muffin pan, then half-fill each cup with batter

Add about 5 choc drops to each cup

Bake for around 25 minutes. Check them at 20 minutes and if a butter knife comes out clean (or a bit chocolatey) they're done

Put on a plate, add a drizzle of honey or maple syrup and enjoy! x
