Super Simple Scones

I love making these scones in summer when the berry garden is bursting with strawberries to cook down and smoosh between two halves.

Ingredients

3 cups self-raising flour
100g butter (cubed and chilled)
2 tbsp sugar
1 cup milk

Tools

sieve
weighing scales
mixing bowl
measuring cups
lined baking sheet

Method

Gather all of your ingredients
Sift the flour into your mixing bowl and then add the cubes of butter
Squash and rub the butter between your finger until it looks like breadcrumbs
Add the sugar
Slowly pour in the milk while mixing with a fork or dough mixer until a loose ball starts to form in your bowl
Bring the mixture together with your hands. If it's a little wet, add a bit more flour
Put a little flour onto the counter and knead the dough for a few minutes until it is smooth
Make a ball shape and flatten slightly. Place in a bowl with a plate on top and chill for 30 minutes
Preheat oven to 200C/400F
Flour your counter again and roll out chilled dough to 1 inch thick
Use a drinking glass to cut circles from your dough and place on baking sheet
Brush the tops of the scones with milk and bake for approximately 15 minutes

Enjoy (especially with strawberry jam for morning tea) x
